PREPARATION
1.
In a food processor, add the tofu, oil, lemon juice, vinegar, sugar, and salt until thoroughly smooth.
2.
Adjust flavors, adding more lemon juice or salt to taste and pulse to incorporate any added ingredients.
3.
Chill for 5-10 minutes before serving.
NOTES, TIPS, TRICKS, HINTS, ETC:
1.
Extra-firm silken tofu is similar enough in texture to firm silken tofu so either can be used.
2.
Transfer to an airtight container and refrigerate for up to 1 week. Stir well before using.
