PREPARATION
1.
Preheat the oven to 350F.
PREPARING THE PASTA

Prepare the tortellini according to the directions on the package.
PREPARING THE TOMATOES

Wash the tomatoes and remove the stems.
4.
Place in a baking dish and bake for 10-15 minutes, or until tomatoes begin to wilt.
PREPARING THE PROSCIUTTO
5.
In a frying pan over medium-high heat, add the chopped prosciutto.
6.
Fry until the prosciutto starts to crisp.
7.
Add the prosciutto to the tortellini and mix well to combine.
TO SERVE
8.
Place a spoonful of tortellini onto a plate.
9.
Add a spoonful on wilted cherry tomatoes next to, or on top of, the pasta.
10.
Sprinkle with freshly grated parmesan and garnish with parsley.
