PREPARATION
MAKING THE BASE/MARINADE
1.
In a medium bowl, stir together the soy sauce, mirin, and sugar until the sugar is dossolved.
2.
Stir in the sesame oil, cornstarch, ginger, and scallion, and season with pepper to taste.
3.
Add the beef, tossing it well to coat the sliced evenly throughout. Let stand 20 minutes at room temperature or for up to 1 hour refrigerated.
COOKING THE NOODLES

Bring a large pot of water to a boil and cook the noodles until tender yet firm, about 3 minutes. Drain and divide among large plates.
PREPARING THE STIR-FRY

Heat 1 tablespoon of oil in a large skillet or wok over high heat and stir-fry the beef until medium to medium rare, about 2-3 minutes.

Divide among the noodle servings. Add the remaining oil and stir-fry the watercress until just wilted, about 2 minutes. Put an equal amount atop each serving of noodles and garnish with toasted sesame seeds if desired.
