PREPARATION
1.
Wash and trim the chicken breasts.
2.
Slice each breast 3/4 of the way through, opening them enough to put one slice of cheese in each breast (may need to fold the piece of cheese in half).
3.
Close the breast back up and put two to three sprigs of fresh parsley on each breast.
4.
Wrap each breast with two pieces of prosciutto.
5.
In a skillet big enough for both breasts, heat the olive oil over medium heat.
6.
Place the two wrapped chicken breasts in the skillet and cook for 15 minutes on each side, raising the heat to medium high if necessary.
7.
Ensure the chicken is cooked all the way through before removing from heat. The prosciutto should have a nice crisp.
NOTES, TIPS, TRICKS, HINTS, ETC:
Alternatively: This can be done in an oven. Preheat oven to 375 F and bake wrapped chicken for 25-30 minutes or until no longer pink inside.
