PREPARATION
1.
Cook the pasta according to package directions. Reserve 1 cup of the cooking liquid in case you want to thin out your sauce.
2.
Heat the butter over medium heat. Add the garlic; saute until soft and fragrant.
3.
Add the pumpkin and heavy whipping cream. Simmer until slightly thickened.
4.
Add the cheese and stir to combine.
5.
Toss the pasta in the sauce and thin as needed using the reserved cooking liquid.
6.
Top with additional Parmesan and season to taste.
NOTES, TIPS, TRICKS, HINTS, ETC:
A few sage leaves or rosemary sprigs add a lot of flavor. Add with the garlic and pull out just before the pumpkin and cream are added.
