PREPARING THE STEAKS
Rub the steaks all over with olive oil, enough to coat both sides and season generously with salt and pepper.
Let the steaks sit for 5 minutes.
COOKING THE STEAK AND ANCHOVIES
Heat a cast iron or grill pan over high heat.
Place the steaks in the pan or on the grill and cook until nicely charred on the bottom, 2-3 minutes. Flip them over and cook the second side for another 2 minutes. This will leave them medium rare. If you desire a more cooked steak, cook longer on each side.
Remove the steaks to a warm plate or a cutting board and let them rest for at least 5 minutes.
While the steaks are resting, heat 1/4 cup of olive oil in a small skillet over medium heat.
Add the anchovies and cook, stirring with a spoon until they dissolve into the oil.
Add the rosemary and cook for just 1 minute.
SERVING THE STEAK
Slice the steaks, spoon the anchovy mixture over them, and sprinkle it with a bit more salt if desired. Serve immediately.
