PREPARATION
1.
Combine the oil and garlic in a small saucepan and fry the garlic over medium heat until golden, about 7 to 10 minutes.
2.
Turn off heat - garlic will continue to sizzle for awhile.
3.
Cool completely in the pan and transfer the garlic and flavored oil to a glass jar with a lid.
NOTES, TIPS, TRICKS, HINTS, ETC:
1.
The amount of oil needed will vary, depending on the size of the garlic head.
2.
The trick is to make sure the finely chopped garlic is is leveled and covered by about 1/8 inch of oil.
3.
It is important not to burn the garlic, or it will taste bitter.
4.
Can be kept in an airtight jar for up to 1 week in the refrigerator.
