PREPARATION
Cooking the Chicken
1.
Preheat oven to 375 F.
2.
Wash the chicken and place into a lightly oiled baking dish.
3.
Add salt and pepper to the chicken.
4.
Bake in preheated oven for 15-20 minutes, or until no longer pink in the middle.
Preparing the Broccoli
5.
While chicken is cooking, boil a pot of water on the stove.
6.
Add the broccoli florets to the boiling water and boil for 4-5 minutes.
7.
Remove and drain the broccoli. It shouldn't be too cooked but cooked just enough.
Assembling the Salad
8.
In a large salad bowl, add the greek yogurt and the freshly squeezed lemon juice. Mix well.
9.
Shred or cut the chicken and add to the yogurt mixture.
10.
Add the semi-cooked broccoli florets, pecans, chopped apple, shredded carrots, and raisins.
