PREPARATION
PREPARING THE MARINADE
1.
In a large resealable plastic bag, combine lime juice, green onions, jalapeños, olive oil, cilantro, salt, and pepper.
2.
Add halibut; seal bag and turn to coat. Refrigerate for 10-15 minutes, turning once.
PREPARING THE BACON
3.
While the halibut marinades, oil and heat a grill or grill pan over medium-high heat. In a large skillet or pan, add the bacon strips and cook until very crispy (this should take 10-15 minutes).
4.
Drain bacon slices on a paper towel lined plate.
5.
Once grease is drained off, crumble the bacon and set aside.
PREPARING THE FISH
6.
Remove the halibut from the marinade and add to the heated grill.
7.
Grill, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until fish flakes easily with a fork.
8.
Top with crumbled bacon and fresh chopped herbs if desired.
NOTES, TIPS, TRICKS, HINTS, ETC:
1.
Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.
2.
If you don't have a grill or grill pan, you can broil the fish 4 inches from the heat.
