PREPARATION
1.
Heat oil in a large skillet.
2.
Add onion and cook, stirring frequently, until golden brown, about 5 minutes.
3.
Add chorizo and cook briefly, stirring.
4.
Add chickpeas, corn kernels, and diced tomatoes, and cook another 5 minutes to heat through.
5.
Transfer to plates and season with pepper and salt and sprinkle with parsley.
