PREPARATION
1.
Cook penne pasta according to directions on package.
2.
Once pasta is done and drained, place back in pan and add 1 cup of greek yogurt and mix well.
3.
Cut the lemon in half and squeeze both halves into the pasta mixture and mix well.
4.
Add the capers and mix well.
5.
Cut the smoked salmon into small pieces and add to the pasta and mix well.
6.
Plate up and sprinkle with pepper or smoked paprika if desired.
