PREPARATION
1.
Preheat the oven to 350 Degrees.
PREPARING THE CHICKEN
2.
Lightly coat the bottom of a frying pan with olive oil and add the cubed chicken over medium-high heat.
3.
Cook the chicken for 8-10 minutes, stirring frequently.
STEAMING THE CAULIFLOWER
4.
While the chicken is cooking, cut the cauliflower into florets.
5.
Steam the cauliflower for 10 minutes.
PREPARING THE BACON & MUSHROOMS
6.
Remove the chicken from the frying pan and set aside. In the same pan, add the bacon and mushrooms.
7.
Saute for 5-7 minutes, stirring frequently.
PREPARING THE FILLING
8.
Combine cheeses in a large bowl. Remove ¼ of cheese and set aside.
9.
Stir chicken, green onions, bacon, mushrooms and garlic into remaining cheese.
10.
Stir cauliflower into cheese mixture and season with salt & pepper. Pour into a 9x13 glass baking dish. Top with additional cheese.
BAKING
11.
Cover with foil and bake for 25 minutes.
12.
Remove foil and bake for an additional 5 minutes.
TO SERVE
13.
Garnish with parsley and serve warm.
