PREPARATION
Melting the Chocolate
1.
In a small heavy saucepan over low heat, combine the chocolate, coconut milk, and coconut oil.

Cook for 2-3 minutes, stirring constantly, or until the chocolate melts.
Preparing the Mousse

In a food processor, combine the avocado and honey.
4.
Add the melted chocolate and process until smooth.
5.
Spoon the mousse into serving bowls.

It is best to eat within three days, as the liquid from the avocado begins to separate from the solids.
