PREPARATION
1.
Preheat oven to 400°.
2.
Sprinkle tops of cutlets with salt and pepper.
3.
Lay flat on a foil lined, greased baking sheet.
4.
Layer each cutlet evenly with pesto. Evenly distribute the sun-dried tomato over the pesto.
5.
Sprinkle the mozzarella cheese over the sun-dried tomatoes.
6.
Roll each cutlet up as tightly as possible. Secure with 1-2 toothpicks to ensure cutlets stay closed.
7.
Wrap 2 slices of bacon evenly around each cutlet.
8.
Place on a greased foil-lined baking sheet. Bake 12-15 minutes or until golden brown and pork is tender and bacon is cooked. Discard toothpicks before serving.
