PREPARATION
BAKING THE PLUMS
1.
Preheat oven to 425°F.
2.
Slice plums in half and remove pits. Toss the plums with lemon juice in a large bowl.
3.
Arrange the plums cut-side up in a shallow baking dish.
4.
Roast for 20 to 25 minutes, or until tender. If the juices in the pan begin to burn, add a little water and cover the pan loosely with aluminum foil. Let cool slightly before serving.
PREPARING THE SPREAD

In a bowl, add the goat cheese and honey.
6.
Mix until well combined.
7.
ASSEMBLING THE SANDWICH
8.
Toast the bread slices to desired level of crispness.
9.
Spread the goat cheese with honey mixture on all slices of bread.
10.
Top with baked plums and close the sandwich.
