PREPARATION
PREPARING/COOKING THE POTATOES
1.
Preheat oven to 400 F. Peel and slice the potatoes into 1 inch thick rounds.
2.
Coat a baking sheet with olive oil and place potato slices in a single layer.
3.
Salt and pepper to taste and place into preheated oven for 30 minutes or until potatoes are soft but not mushy.
PREPARING/COOKING THE CHORIZO
4.
While the potatoes are cooking, slice the chorizo sausages into ~1 inch thick pieces.
5.
In a skillet or frying pan over medium-high heat, place the chorizo in a single layer and cook until each side starts to char a bit. Remove from heat and set aside.
ASSEMBLING THE BITES
6.
When potatoes are done and cooled to the touch, using a toothpick, place a piece of chorizo sausage on each potato round and top with a green olive.
