PREPARATION
1.
Place a large non-stick skillet over medium-high heat.
2.
Add the olive oil. Once warm, add the minced shallots and cook, stirring frequently, until slightly softened and slightly browned, about 3-5 minutes.
3.
Add asparagus, tossing to coat, and cook, turning occasionally, for 5-6 minutes.
4.
Add walnuts and balsamic vinegar and cook until al dente and slightly browned, about 3-4 minutes.
5.
Transfer to plate and sprinkle with feta, salt, and pepper and serve immediately.
