PREPARATION
PREPARING THE STOCK
1.
Follow the steps for recipe "Chinese Superior Stock", which is in the dependent recipes section to the right. You will need 1 and 1/2 cups of this stock.

Heat the oil in a medium pot over medium-high heat.
3.
Stir-fry the garlic, ginger, and scallions until fragrant, about 1 minute.
4.
Add the shiitakes, dried shrimp (if using) and the cabbage and continue to stir-fry until wilted and golden, about 5 minutes.
5.
Add the noodles and toss to distribute the ingredients evenly.
6.
Add the stock, soy sauce, sesame oil, and black pepper to taste.
7.
Reduce heat to low, cover the pot, and braise for 6 to 8 minutes, until the noodles have completely absorbed the liquid.
8.
Add fresh chili peppers for spice (as shown).
