PREPARATION
1.
Heat the oven to a broil.
TOASTING THE BAGUETTE
2.
Slice the baguette into ~12 slices.
3.
Lay flat on a baking try and brush each very lightly with olive oil.
4.
Place in the broiler for 2-3 minutes, until the slices start to crisp. Don't let them completely crisp.
5.
Remove and set aside. Leave the broiler on.
PREPARING THE PEAR
6.
Pour 1-2 Tbs of olive oil into a pan large enough to hold all pear slices in one layer.
7.
Add the pear slices and sprinkle with light brown sugar. Cook over medium-high heat for 1-2 minutes.
8.
Turn gently with a spatula and cook for 1-2 minutes, until the pears are softer but still firm and the sugar caramelizes. Cool to room temperature.
PREPARING THE BITES
9.
Place the mozzarella slices onto the lightly crisped baguette slices and place back into the broiler.
10.
Broil for 2-3 minutes, or until the cheese begins to melt. Remove at that point.
11.
Top each slice with caramelized pear and sprinkle with chopped thyme.
