PREPARATION
1.
Heat the oven to broil.
2.
Heat olive oil in a large Dutch oven or pot over medium-high heat.
3.
Add onion, garlic, and beef. Stirring frequently, cook until meat is browned and crumbly, about 3 minutes. Drain excess fat.
4.
Stir in chicken broth, marinara sauce, diced tomatoes with mild green chilies, beans, chili powder, and cumin. Season with salt and pepper, to taste.
5.
Bring to a boil and stir in pasta; cover, reduce heat to a simmer and cook until pasta is al dente, about 14 minutes.
6.
Remove from heat. Stir in 3/4 cup of the cheese (reserving the rest for the top) and parsley. Mix well.
7.
Place the mac n cheese into a baking dish and sprinkle the remaining cheese on top. Sprinkle the breadcrumbs over the cheese and place in the oven to broil.
8.
Broil for 5-6 minutes, or until the cheese and breadcrumbs on top crisp.
