PREPARATION
1.
In a small bowl, pour 3 tbsp of the almond milk over the arrowroot and let it dissolve. Set aside.
2.
Pour the remaining almond milk, maple syrup, and salt into a small pot and sprinkle the agar powder (or flakes of using) over the top. Let stand for 15 minutes to soften.
3.
Chop the chocolate into small pieces and set aside.
4.
Over medium-low heat, slowly bring the milk mixture to a boil. Lower the heat slightly and stir continuously until the agar powder is dissolved, about 2 minutes.
5.
Stir in the arrowroot mixture and continue stirring until thickened.
6.
Turn off the heat and whisk in the chocolate, orange juice, and vanilla.
7.
Stir until chocolate has melted and is smooth.
8.
Pour the pudding into a large bowl. Place it, uncovered, in the refrigerator until it is completely cool, about 1 hour.
9.
Remove and spoon pudding into a food processor. Blend or process, stopping to scrape the sides, until the pudding is very smooth.
10.
Transfer into dessert cups and top with orange zest.
