PREPARATION
1.
Preheat the oven to 350 degrees F. Rub the butter all over the inside of a cast iron skillet or a round baking dish and set aside.
2.
Slice the potatoes as thin as possible, use a mandolin if you have one and transfer them to a bowl.
3.
Add the parmesan and garlic to a bowl and mix well.
4.
Place one layer of the potato slices in even rows and slightly shingled on the bottom of the baking dish.
5.
Season with salt and pepper and cover with parmesan/garlic mixture.
6.
Place another layer of potatoes on top of the first layer going in the opposite direction and season again. Sprinkle more parmesan/garlic on top.
7.
Repeat with a final layer of potatoes ending with a cheese layer on top. Season again.
8.
Bake for about 60 minutes or until the tip of a sharp knife can go through the potatoes.
9.
Slice in "pie slices" and serve warm.

A partially dairy-free variant of this recipe can be made to reduce the amount of dairy. Just substitute Earth Balance Natural Buttery Stick for butter.
