PREPARATION
1.
heat a grill or a grill pan to medium-high.
2.
Brush one side of each eggplant round and place on the grill.
3.
Brush the other side with olive oil and grill each side for 3-5 minutes.
4.
Add the cheese slices to the grill. Grill each side for 2-3 minutes.
5.
Add 1/2 tbsp (or more to taste) of pesto to each bun.
6.
Top with one slice of grilled eggplant and one slice of cheese hot off the grill and serve.
