PREPARATION
PREPARING/COOKING THE POTATOES
1.
Preheat the oven to 375 F.
2.
Wash the potatoes really well. Cut the ends off, leaving enough space to scoop out a "boat" once cooked.
3.
Brush with olive oil and place on a baking sheet.
4.
Bake in preheated oven for 30 minutes, or until potatoes are soft.
PREPARING THE FILLING
5.
While the potatoes are cooking in the oven, boil 1 cup of water in a saucepan and cook corn kernels for ~2-3 minutes, or until soft. Drain.
6.
Dice the ham into small dices and finely chop the green onion.
7.
Grate the cheese.
8.
Mix these ingredients together well.
FILLING THE POTATO BOATS
9.
Remove the potatoes from the oven and let cool.
10.
Once cool to the touch, spoon out a spoonful of potato and discard. Repeat with all potatoes.
11.
Spoon a spoonful of filling into each hallowed potato and sprinkle with salt and pepper to taste.
NOTES, TIPS, TRICKS, HINTS, ETC:
When looking for the right size potato, think portobello mushroom size to stuff the ends.
