PREPARATION
1.
Preheat oven to 350 degrees.
2.
Cut the pumpkins in half, lengthwise, and remove all seeds.
3.
Use a potato peeler to remove pumpkin skins.
4.
Using a very sharp knife, cut pumpkins into 1/4 - 1/2 inch thick strips to resemble french fries.
5.
Mix together the curry powder, garlic powder, onion powder, and cayenne pepper.
6.
Put the fries in a bowl with the olive oil and add dry mix. Toss by hand until well coated.
7.
Arrange the fries, single layered, on a cookie sheet lined with parchment paper.
8.
Bake for 30 minutes or until pumpkin is soft.
