PREPARATION
1.
Spread 1 tbsp of mustard on one side of each sandwich.
2.
Evenly divide the parsley leaves and sprinkle over the mustard.
3.
Add slices of cucumber and then sprouts.
4.
Top the sprouts with some sliced olives and then top with thin slices of smoked salmon.
5.
Add a few slices of fig to each sandwich and place the top on. Serve immediately.
