PREPARATION
1.
Preheat oven to 450 degrees.
PREPARING THE POTATOES
2.
Place potatoes on a baking sheet, spreading out as much as possible.
3.
Combine melted butter, olive oil, garlic powder, and paprika in a small bowl.
4.
Reserve 1 tablespoon and drizzle rest on potatoes. Toss to coat. Season to taste with salt and pepper.
5.
Place in oven for 30 minutes, stirring halfway through.
PREPARING THE SAUSAGE
6.
On a second baking pan, combine sausage slices, onion, and spinach. Toss with the butter mixture that was set aside.
7.
Place in oven for 20 minutes, stirring halfway through.
TO SERVE
8.
Combine potatoes with sausage, onions, and spinach and mix well. Be gentle when mixing so the potatoes don't get mashed.
9.
Divide evenly and sprinkle with freshly ground pepper.
