PREPARATION
1.
Add a small pinch of salt and sesame oil to ground beef. Mix well and set aside.
2.
Mix 1 tablespoon of cornstarch with 2 and ½ tablespoons of water in a small bowl to make water starch.
3.
Cut tofu into square cubes. Bring a large amount of water to a boil and then add a pinch of salt. Slide the tofu in and cook for 1 minute. Move out and drain.
4.
In a wok and heat up around 2 tablespoons of oil, fry the ground meat until crispy. Remove the beef out and leave the oil in.
5.
Fry douban for 1 minute over medium-low heat in the wok and then add garlic, white part of scallion, ginger and douchi and cook for 30 seconds until fragrant. Then add red pepper flakes.
6.
Add broth to the seasonings and bring to a boil over high heat.
7.
Gently add the tofu cubes. Add light soy sauce and beef. Lower the heat after boiling and then simmer for 6-8 minutes.
8.
Stir the water starch and then pour half of the mixture into the wok. Wait for around 30 seconds and then pour the other half. You can taste the tofu and add pinch of salt if not salty enough. Stir well, making sure all of the tofu is covered.
9.
Remove from heat. Sprinkle sichuan peppercorn powder (to taste) and mix well.
10.
Serve with sliced green scallions.
NOTES, TIPS, TRICKS, HINTS, ETC:
1.
Douban is also known as Doubanjiang, or Toban-djan, Chili bean sauce, is a spicy, salty paste made from fermented broad beans, soybeans, salt, rice, and various spices.
2.
Douchi, or Tochi is a type of fermented and salted black soybean. Alternative names: Fermented black soybeans, Chinese fermented black beans, salted black beans, salty black beans.
