PREPARATION
1.
Lay each piece of salmon flat.
2.
Spread desired amount of cream cheese on one side.
3.
Sprinkle a pinch or two of freshly grated orange zest over cream cheese.
4.
Cover cream cheese with ~1/4 cup arugula.
5.
Wrap the salmon up into the tightest roll possible. If need be, secure with a toothpick.
NOTES, TIPS, TRICKS, HINTS, ETC:
If salmon isn't thin enough, cover both sides with saran wrap and gently roll a rolling pin over to achieve desired thinness.
