PREPARATION
1.
Heat the olive oil in a large pot over medium heat.
2.
Add the onion, garlic, cilantro sprigs, cumin, and a heavy pinch of salt and cook, stirring often, until softened but not browned. ~10 minutes.
3.
Add the chipotle in abodo and the sweet potatoes and stir to combine.
4.
Ad the vegetable stock and turn up the heat.
5.
Once the soup comes to a boil, lower the heat and simmer until the sweet potatoes are very soft, about 30 minutes.
6.
Remove and discard the cilantro.
7.
Carefully puree the soup in a blender and transfer to bowls. Garnish each bowl with a few of the reserved cilantro leaves.
