PREPARATION
1.
Preheat oven to 350F.
2.
Cook manicotti noodles according to the directions on the package.
3.
While the noodles are cooking, chop the parsley and basil and grate the parmesan and mozzarella cheese.
4.
In a bowl, mix together 1 1/2 cup ricotta cheese, 1 cup cottage cheese, 3/4 cup freshly grated mozzarella cheese, 3/4 cup parmesan cheese, 3 T chopped parsley, 1 T chopped basil, 1 tsp salt and 1/2 tsp pepper.
5.
Drain manicotti noodles and slice each noodle down the middle so you can fill them.
6.
Spoon cheese mixture into noddles and place the stuffed noodle seam side down in a baking dish.
7.
OPTIONAL - you can sprinkle the remaining mozzarella over the noodles along with the tomato sauce or you can cook them as is and do this step after they've cooked.
8.
Cover with foil and bake the stuffed noodles at 350F for 30 minutes, checking after 20 minutes.
9.
Remove from the oven and plate. Spoon sauce over the top of the noodles and sprinkle with some mozzarella cheese.
