PREPARATION
1.
Preheat the oven to 350 degrees Fahrenheit.
2.
Line a 12-cup muffin pan with paper baking cups.
3.
Cut the feta into small cubes.
4.
Mix the flour, baking powder and salt together in a bowl.
5.
Combine the spinach, beaten eggs, olive oil and milk in a separate bowl.
6.
Add the dry mixture to the spinach mixture; do not over mix. Fold in the feta.
7.
Divide the mixture evenly in the muffin cups. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
