PREPARATION
PREPARING THE TURKEY MEATBALLS
1.
Combine the onion, garlic, herb leaves, and arugula in a food processor and pulse until very finely chopped.
2.
Transfer to a large mixing bowl and add the turkey, salt, and pepper.
3.
Using your hands, thoroughly combine all ingredients and roll into golf-ball sized meatballs.
PREPARING THE MARINARA SAUCE

In a large pot over low heat, add the marinara sauce.
COOKING THE MEATBALLS
5.
While the sauce is warming, heat the olive oil in a large skillet over medium-high heat.
6.
Add the meatballs, in batches if necessary, and cook until they're browned all over, about 2-3 minutes.
7.
Transfer the browned meatballs to the simmering marinara sauce and partially cover the pot.
8.
Let the meatballs cook gently for 1/2 an hour, carefully stirring every now and then to make sure they are cooking evenly.
9.
Serve hot.
