PREPARATION
1.
Melt the butter in a large saucepan.
2.
Add the onion and sauté over medium-high heat until soft and translucent.
3.
Add the diced potatoes and cook together for about 5 minutes.
4.
Add the stock and bring to a boil.
5.
Turn the heat down and simmer, covered, for 15-20 minutes.
6.
Add the wild garlic leaves and cook for 2-3 minutes.
7.
Take the soup of the heat and puree with a hand blender, or blender, being careful of the heat.
8.
Season with salt and pepper to taste. Serve in individual bowls with a dash of cream on top.
9.
Serve with Wild Garlic Potato Bread if desired.
