PREPARATION
HOW TO PREPARE THE WHIPPED GOAT CHEESE SPREAD

Follow the steps in the dependent recipe to make this spread.
PREPARING THE MUSHROOMS

Clean mushrooms, trimming stems and cleaning the flesh out with a spoon.

Mix oil, sherry, soy sauce, vinegar, garlic, and oregano in a large skillet.

Heat until mixture begins to bubble, then add mushrooms, top side down.

Reduce to medium heat, cover and cook 3 minutes. If the pan becomes dry, add 2 to 3 tablespoons of water. Turn mushrooms and cook second side until tender when pierced with a sharp knife, about 5 minutes.
PREPARING THE MINT SAUCE

Wash the mint well and discard any stalks which are thick and tough. Then chop finely.

Place the mint in a bowl and add 1 Tbsp of the vinegar. Give it a stir and it should be a thick consistency. If you need a little more vinegar, add a little at a time until you are happy with the thickness. You should be able to have a blob of mint sauce on a teaspoon without it being watery.

Add a few teaspoons of sugar and stir well. Taste the mixture, and add a little more sugar until it is as sweet or sharp to your liking.
ASSEMBLING

Toast the buns (can broil, grill, or toast in the toaster).

Add one large spoonful of the whipped goat cheese spread to each bun and add one slice of tomato.

Top with a warm portobello mushroom and 1-2 slices of prosciutto.

Add a small spoonful of mint sauce and place the top bun on. Serve immediately.
