PREPARATION
1.
Place the oven to broil.
TOASTING THE BREAD

Slice the baguette and lay each piece flat on a baking sheet. Lightly brush each piece with olive oil.
3.
Place in the broiler for 3-4 minutes, or until the slices start to crisp. Leave in until desired level of crisp is achieved.
PREPARING THE BRUSCHETTA

Chop salmon, garlic, tomato and onion into a small dice, removing the seeds from the tomato as you go. Chop the basil finely as well and mix all together in a small bowl.
5.
Add the olive oil and lime juice and some salt and pepper to taste, mix gently.
6.
Spoon the salmon-tomato mixture on to the bread. Sprinkle with black olive slices and some shredded mozzarella cheese and serve.
