PREPARATION
PREPARING THE CHICKEN
1.
In a cast iron skillet or frying pan, lightly coat the bottom with olive oil and turn the heat on to medium-high.
2.
Add the chicken and cook for 10 minutes, or until no longer pink on the inside.
PREPARING THE FILLING

In a large bowl, add the diced mango, chopped mint and cooked chicken. Stir to mix well.
PREPARING THE WRAP

Heat the tortillas for 1-2 minutes in a large pan over medium-high heat to warm them up. (This can be done in the microwave for 10 seconds).
5.
Lay the warm tortillas flat and spoon the filling onto the tortillas.
6.
Wrap the tortillas carefully so they don't tear.
