PREPARATION
1.
In a medium bowl, with a wooden spoon, combine cold cream cheese, cheddar cheese, finely grated (loosely packed), and 1 cup carrot, finely grated.
2.
With moistened hands, gently form balls, each equal to 1 level tablespoon of mixture.
3.
Serve or refrigerate, covered with plastic wrap, up to 2 days.
