PREPARATION
1.
Heat a griddle pan over medium-high heat and very lightly coat the bottom with olive oil.
2.
Butter one side of each piece of bread.
3.
Lay two pieces of bread, buttered side down, on the grill pan.
4.
Spread 1 1/2 tbsp of fig spread over each piece of bread.
5.
Layer with 4 slices of brie cheese and then 3 slices of turkey.
6.
Place the top on, buttered side up.
7.
Cook on each side for 4-5 minutes, or until the cheese is melted to your liking. Serve immediately.
