In a large bowl, mix grated carrots, raisins, parsley, and pine nuts.
Juice the lemon over the carrot mixture and mix well.
Divide evenly and sprinkle 1 tsp (or more) of sesame seeds over carrot salad. Serve at room temperature or chilled.
