PREPARATION
1.
Blitz the shallots, garlic, oregano, basil, spinach, lemon zest, salt, and pepper together in a food processor until finely chopped.
2.
Place the mixture in a large bowl along with the turkey and mix with your hands or a spatula to combine.
3.
Form the mixture into 4 patties.
4.
Heat the grill over a grill pan over medium-high heat.
5.
Brush the burgers with olive oil and cook until firm to the touch and nicely browned. This will take 7-8 minutes per side.
6.
Serve warm.
