PREPARATION
HOW TO MAKE BEET HUMMUS
1.
Follow the steps in the dependent recipe to make the beet hummus.

BAKING THE SWEET POTATO

Preheat the oven to 350 F.

Thoroughly wash the potatoes and trim the ends off. Slice the potatoes in 1 inch rounds.

Lightly oil a baking sheet and place potato rounds on the sheet.

Cook in the preheated oven for 35-45 minutes, or until rounds are tender but not mushy. Remove and let cool.
ASSEMBLING

Spread a layer of beet hummus over each potato.

Sprinkle with roasted chickpeas, parsley and sunflower seeds.
