PREPARATION
HOW TO PREPARE THE TARTLET CRUST
1.
Follow the steps in the dependent recipe to make the tartlet crust.
2.
Preheat oven to 350 F.
3.
In a small muffin tin (24 slots), lightly coat each slot with olive oil spray. Evenly distribute the tart crust into each muffin slot and puncture the bottoms a few times with a fork.
PREPARING THE CHICKEN AND EGGPLANT

Dice the chicken into small cubes.
5.
In a nonstick pan, lightly coat the bottom with olive oil.
6.
Add the diced chicken and eggplant and cook, stirring occasionally, for 7-9 minutes.
PREPARING THE FILLING

Add the garlic powder, onion powder, egg, and cheese together. Mix well.
8.
Add the chicken and eggplant to the mixture and stir well.
9.
Fill each muffin cup with the mixture.
BAKING THE TARTLETS
10.
Bake the tartlets for 20 minutes, or until the mixture is completely baked.
11.
Add sliced black olives when finished baking and serve immediately.
