PREPARATION
PREPARING THE POTATOES
1.
Peel and dice up the potatoes.
2.
In a large pot, boil 4 cups of water and add a few pinches of salt.
3.
Add the potatoes and onion and boil until soft. Drain and cool.

In a large bowl, add the potatoes, onion, almond milk and unsalted butter. Using an immersion blender or hand blender, blend until incorporated well.
PREPARING/COOKING THE POTATO PANCAKES

Mix mashed potatoes, egg, flour, salt, and pepper.
6.
Preheat skillet and add a couple of tablespoons of grape seed oil.
7.
form the potato mixture into very small pancakes and carefully drop into the oil.
8.
Brown on both sides until a small crisp begins to form.
9.
Transfer to a paper towel lined plate and continue until all potatoes are cooked. Recipe should yield approximately 24 small pancakes.
HOW TO MAKE WHIPPED GOAT CHEESE SPREAD

Follow the recipe instructions in the dependent recipe for the whipped goat cheese.
ASSEMBLING THE BITES

Spoon one spoonful of whipped goat cheese spread onto each small potato pancake.

Top with smoked salmon and sprinkle with black sesame seeds. Top with thyme sprig and serve.
