PREPARATION
Grilling the Chicken
1.
Preheat the grill to desired temperature to grill the chicken.
2.
Grill the chicken according to the type of grill you have.
Preparing the Cherry Sauce

In a large skillet/pan over medium-high heat, add scallions, chicken broth, balsamic vinegar, and dried cherries.

Bring to a boil and then cover and bring to a simmer for 20 minutes while the chicken grills. Stir occasionally.
To Serve
5.
Plate the grilled chicken and ladle the cherry sauce over each grilled chicken breast.
"PAIRS WITH" RECIPES:

In lieu of grilling the chicken breast, melt 1 tablespoon coconut oil in an ovenproof skillet and brown each side of the chicken breast (~3 minutes each side). Add all other ingredients to the ovenproof skillet and cover with ovenproof lid or aluminum foil and bake for 20 minutes, or until the chicken is cooked through.
